Oatmeal Jam Bars

I made these bars for an open house/baby shower for a friend a few weeks ago, and remembered how much I LOVE them.  I cut them into triangles for something a little different, and they were pretty cute!  Enjoy!

  • 1 1/2 c. butter, softened
  • 1 1/2 c. brown sugar
  • 3 c. flour
  • 3/4 tsp. baking soda
  • 3/8 tsp. salt
  • 3 c. oatmeal
  • 2 1/4 c. seedless jam (raspberry and boysenberry are great)

Preheat oven to 350 degrees.  Line a sheet cake pan with non-stick foil.  Press 6 c. mixture into bottom of pan, spread jam over, and then sprinkle and lightly press the rest of the oatmeal mixture over the top.  Bake for 3o minutes or until lightly browned.  Let cool, cut and store in airtight container.  (This recipe is easily dividable into thirds.  1/3 of the recipe will make an 8×8 or 9×9, 2/3 of the recipe will make a 9×13, and the whole recipe makes a sheet cake pan.)

TIP: Let cool on the stove for 15 minutes and then put the entire pan into freezer for about 45 minutes.  They’ll be just frozen enough that you can slide the whole business right out of the pan, pull the sides down, and slice the bars with a big chef knife.  It’s much, much easier. 🙂
